And I think to myself, "What a wonderful world"

There is something so soothing about coming home.

It's spring break and my parents are on an anniversary trip. They asked if I'd be interested in coming home to spend the week with Anna while they were gone.

Vacation in Santa Barbara? With Susan? Let's put it this way: You don't have to ask me twice!

I flew into LAX last night. My parents left the car for me when they flew out earlier that day. As I started drivng home, I was overcome with nostalgia. The radio station was "KOST" and playing love songs after dark. As I drove along the real coast, I sang along to Chicago, a group that always reminds me of growing up. It has been many years, but I grew up in southern California. This is the place where all of my childhood memories originate. How sweet! And how wonderful to get to be part of my little sister's life for a week since we have spent most of her 17 years apart.

Well, I'm happy to report that we're living it up. There is a noticeable difference in my level of energy since I went gluten free, and Anna noticed it right away. We decided to go on a hike in Montecito after the first session of General Conference.






Along the way, Anna took pictures for her photography class. She has to take pictures of 30 different green things. She is so artsy!








The minute we started on the trail, Anna said she felt like we were in the Hunger Games. I reminded her of the significant difference that we weren't out to kill each other. Still, we were eager to take Katniss shots:

Oh, and the waterfall was gorgeous, too :-).

We're looking forward to dinner and a movie tonight thanks to a groupon left for us by our mom. We hope our parents are having as much fun as we're having (and from the emails we've received, I think they're managing just fine!).

Adjusting

Well everyone, I think I might actually be able to survive a gluten free life. After tonight's meal, it doesn't seem like the end of the world.

My friend Eric came over tonight and we cooked up some gluten free pasta that I've had ever since the last time I tried to live gluten free a year and a half ago.



Eric made some delicious alfredo sauce from scratch using whipping cream, Parmesan cheese, butter, and this:


The difference in taste was barely perceptible.


Perhaps the most exciting discovery of all was this:


Ever since I found out this Celiac's thing was for real, the thing I have mourned the most is chocolate chip cookies. I VERY skeptically purchased this cookie mix, quite positive it would be a disappointment. But guess what? They looked the same...


...and they basically tasted the same, too! There are some minor texture differences, but not enough to really notice unless you're looking for it. We froze the extra alfredo sauce and chocolate chip cookies for future meals and desserts.

On Sunday, I whipped up my very own gluten free meal from scratch, which is a rare occurrence for me. I made shepherd's pie using stuff I already had: frozen vegetables, ground beef, potatoes (which I cooked and mashed), and cheese sprinkled on top. The only thing I had to borrow from Celeste was Worcestershire sauce. I even improvised with the recipe since I didn't have any beef broth (I used water instead, as it's main purpose was to keep the meat from burning).

This blessed ailment may be the only thing to get me to cook. Going out to eat just isn't as fun anymore. When someone else is cooking, the choices are much more limited (and, by the way, IHOP is not the place for people with food allergies).
